Useful for snipping herbs, opening vacuum packs, trimming fat and cutting parchment, the jobs where most kitchens keep a cheap right-handed pair. Blades do not separate for cleaning, so residue can collect at the pivot, and they lack the bone notch and spring of dedicated poultry shears. Sharpening reversed blades is a job for someone who knows what they are doing, in practice these get replaced rather than reground.
