The shelves hold couverture chocolate, colored cocoa butter, ready-made tart shells, glazes and mirror glazes, gelling agents, freeze-dried fruit, edible decor, silicone and polycarbonate molds, plus gluten-free and vegan lines. Orders ship across the United States; a handful of items, including frozen purees and cake drums, stay in-store or on the phone only.
