Yoshihiro Cutlery keeps a showroom in Redondo Beach and sells hand forged Japanese knives with an unusually deep left-handed shelf: Kasumi white steel yanagi, usuba and deba, the Edosaki eel knife, plus mirror polished Ginsan yanagi for cooks who would rather not fight rust. Left-handed pieces come with a mirrored D shaped magnolia or shitan handle, a water buffalo horn bolster and a wooden saya in the box.

The shop sharpens, repairs handles, engraves and takes custom orders, which matters when a left bevel needs setting or resetting. Unused and unengraved knives can be returned; anything used stays with the buyer. Opening hours are weekdays 10 to 5, closed Saturday and Sunday, so a weekend visit is off the table.
