A roux spoon is a Louisiana thing: 15 inches of stainless steel with a shallow bowl, made for standing over a deep pot and stirring flour and oil until it turns the color of chocolate without burning a knuckle. Cajun Classic, the utensil line from McWare in Mamou, Louisiana, cuts the bowl of the 7036 on a slant meant for a left hand, so a lefty scrapes the bottom flat instead of riding one edge of the spoon. The solid bowl is the classic version; the same shape exists perforated as the 7036P.
It makes sense for anyone who cooks gumbo, gravy or jambalaya in cast iron or a big aluminum pot, and the long handle keeps fingers away from spitting fat. Small saucepans are another matter, 15 inches is unwieldy in a two-quart pan. Bare steel conducts heat, so leaving it against a hot rim is a bad habit, and the edge can scratch nonstick coatings.
