Challenger Breadware exists for one problem: home ovens leak steam. Founder Jim Challenger designed the Challenger Bread Pan as an upside down cast iron vessel with a shallow base and a tall domed lid, so a slack sourdough boule can be loaded flat without dropping it into a hot pot. It weighs about 22 pounds, comes pre seasoned and sells around the 300 dollar mark, which puts it firmly in the treat yourself bracket. The shop also carries proofing boxes, bannetons, covers and grip mitts sized for the pan.
Suited to bakers who already bake weekly and want deeper oven spring and safer loading, especially those baking batards that never fit a round Dutch oven. Not the place for flour, starter or a first purchase. Cast iron care applies as usual: dry it properly, keep it out of the dishwasher, and reckon with the heft every time you lift it out of a 500 degree oven.
