Preserved began in 2015 as a pop-up in a cedar shed behind another Oakland shop and now holds a storefront on College Avenue in Rockridge. Fermentation and preserving are the focus, and sourdough is one of the main aisles: a dehydrated whole wheat starter from the shop's own culture, kept going for more than a decade and sold with a Weck jar, Central Milling flours, proofing baskets, scoring tools, scales and books.
